1 egg yolk
1.5 tsp cornflour
1 tbsp milk
350g chicken breast cut into bite sized pieces
2 tbsp olive oil
100g carrots cut into matchsticks
75g courgettes cut into fine strips (or fine green beans)
3 spring onions
freshly ground black pepper
Sweet and Sour Sauce
2 tbsp soy sauce
4 tbsp tomato ketchup
3 tsp rice wine vinegar
3 tsp caster sugar
2 tsp cornflour
Heat 1 tbsp oil in a wok or frying pan.
Season the chicken, dip in the batter and saute for 3 -4 mins.
remove from the wok and set aside.
Meanwhile mix together all the ingredients for the sweet and sour sauce.
Heat the remaining oil in the wok and stir fry the carrot for one minute, add the courgette and stir fry for 2 mins.
Add the sauce, bring to the boil and cook for 2 -3 mins.
Add the chicken and heat through for a couple of minutes.
Remove from the heat and stir in the spring onions.
Season to taste.
Serve with fluffy white rice (not included in nutritional figures).
