Guiltless Cream of Broccoli

Introduction

I LOVE cream of broccoli soup, but most recipes call for butter and cream. My waist doesn't like that. ;) The low calorie recipes online were made with milk and really sounded like they'd be really runny. I want THICK and creamy! So, I dug through my cupboard and found these ingredients and decided to throw them together. The secret weapon in this is the cream of celery soup. :) I LOVE cream of broccoli soup, but most recipes call for butter and cream. Number of Servings: 5

Ingredients

    4 C chicken or veggie broth or 4 C water with bullion
    1 (12 oz) can evaporated milk
    1 can 98% fat free cream of celery*
    Broccoli (I used the whole bunch)
    1/2 C grated cheddar cheese
    1/2 - 1 onion, chopped
    1 clove garlic, minced
    2 tsp olive oil
    1/4 C fresh flat leaf parsley, chopped

    *I'm sure any "cream of" soup would work.

Tips

The ingredient amounts are kind of a guess. I just threw it together... :)


Directions

Chop up the broccoli, using just the florets.

In a pot, saute the onion in the oil until softened. Add the garlic. Add the water and bring to a simmer.

Add the broccoli and let it simmer until the broccoli is the cooked as much as you want. For soup, I like mine cooked quit a bit.

Add everything except the cheese and heat it up until it's just simmering.

Turn it off and add the cheese, stirring to melt.

Serving Size: 4 1-cup servings, or more.
