Quinoa Skillet
1 cup quinoa
1-15 oz. can diced tomatoes with green chiles
1-15 oz. can black beans rinsed and drained
1-15 oz. can hominy, canned (white or yellow) rinsed and drained
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp dried parsley
1 tsp dried basil
1/2 tsp dried thyme
salt to taste
Tips
Directions
Bring 2 cups of water to a boil. Rinse quinoa thoroughly and add to boiling water, cook, covered, on low heat for 15 minutes. Stir in tomatoes and chiles, beans, hominy, herbs and spices and heat thoroughly.
