Ingredients

    2 ounces pre-cooked Chicken Breast, no skin,
    1/2 cup cooked brown rice
    2 ounces Leeks
    2 ounces Broccoli
    2 ounces Mushrooms
    2 ounces Zucchini
    2 ounces Bell Pepper
    1 ounce Jalapeno Peppers
    1 tbsp Flax Seed,
    1 tbsp Soy sauce (tamari),
    1/2 cup water
    Season to taste (I use black pepper, dried basil and turmeric)

Tips

Pair with a serving of milk or yogurt for a balanced meal.


Directions

Wash all vegetables thoroughly. Slice leeks, zucchini and bell peppers into thin strips. Cut broccoli florets into manageable sizes. Quarter mushrooms. Mince jalapeno.

Combine all ingredients in a wok and cook covered over high heat, stirring regularly to prevent burning. When vegetables are tender and liquid is mostly gone, remove from heat and serve.
