Egg,spinach, and Back bean scramble

Introduction

I got this from the Tim Ferris 4 hour body blog, perfect for the slow carb diet. 1/8 tsp turmeric can be added for additional anti-inflammitory properties, but it changes the taste a bit. Number of Servings: 1

Ingredients

    1/4 cup black beans
    1 cup frozen spinach
    2 organic eggs, or 4 egg whites
    2 tsp oregano
    1 tbsp coconut oil
    1 tbsp minced garlic
    salt and pepper to taste

Tips

You could try doing it omelet style, rather than scramble style, but I found it was difficult because there is not much eggs to other ingredients to keep it together. Adding the beans right after eggs are cracked keeps them "contained" in the eggs, but don't add them first or they will taste overcooked.


Directions

Melt oil in pan, add oregano, spinach, and garlic. Keep over med heat until spinach is no longer frozen. Add eggs and then black beans. Stir until cooked through.
