IntroductionI wanted to make a treat for my birthday and still keep in bounds. These are made in a mini-muffin tin, so they are about two bites each I wanted to make a treat for my birthday and still keep in bounds. These are made in a mini-muffin tin, so they are about two bites each
2 squares of unsweetened Baker's chocolate
2 T Smart Balance or similar margarine
1/3 c granulated sugar (could use substitute for fewer calories and carbs)
1.5 tsp espresso powder
2 large eggs
1/4 c unsweetened cocoa powder
You can sprinkle a little powdered sugar on. I mixed unsweetened coconut with greek yogurt for a tangy "icing", but I don't like really sweet icing anyway.
In a double boiler or metal pan over a pot of boiling water, melt margarine and baker's chocolate (microwave might also work). Wisk in sugar, espresso powder, and vanilla until blended. Wisk in eggs. Sift cocoa powder over and blend in. Put batter in muffin tin. Bake for about 8 min.
