Ingredients

    1 Tbsp olive oil
    1 C diced carrots
    1C diced celery
    1/2 C diced onion
    1 lb split peas
    1 C diced ham (extra lean)
    3 C chicken stock
    2 C water
    1 bay leaf
    1/4 tsp dried thyme

Directions

Cook carrots, celery and onion in olive oil until soft. Add peas, ham, chicken stock, water and herbs. Simmer on low for about an hour until the peas soften.
