1 oz. part skim mozzarella cheese
bell peppers to total 1 cup (if you use red, yellow, and orange, you can call it Rainbow..)
Other veggies if desired
1 T Olive oil
use pure egg whites for lower calories, but it lowers protein, too. Use fat free cheese if desired.. Add other veggies as desired. About one cup of veggies seemed right for four eggs.
Chop veggies ahead of time to eliminate the prep time.
Chop the peppers up and put away most for later. Measure out one cup for frying. If you are using only one, it is about one whole bell pepper.
Heat olive oil in frying pan and fry the peppers a couple minutes. Beat the eggs and pour them in the pan. Sprinkle the mozzarella cheese on top and let it set a bit before you stir.
Serving Size: makes 2 large servings, 3 medium, 4 small
