Ingredients

    Bottom Round Beef - cubed to Stew Pieces
    Celery - 3 stalks
    Carrots - 4
    Onions - 2 medium
    Potatoes - 2 Medium
    Beef Stock - 8 cups
    Canned Whole Peeled Tomatoes - 2 large cans

Tips

Can include 2 parsnips


Directions

Cut Roast into cubes for stewing
Heat Olive oil in large pan and brown meat
Add to Crock pot with vegetables and stock
Cook on high for 4-6 hours - add garlic and pepper to taste
