Introduction

Yummy and hearty vegetarian chili made with sweet potatoes and super-fun purple potatoes. Spices are left pretty basic since everyone always does their own thing with spices anyway...Use your imagination and make it your own! Number of Servings: 8

Ingredients

    4 cups Water
    2 cubes Tomato bouillion
    1/4 cup sweet yellow onion
    2 cloves garlic
    10 Baby Carrots
    1/2 Sweet potato
    2 Purple Potatoes
    1 tsp garlic salt
    1 tsp cayenne pepper
    1 Tbsp chili powder
    1/4 Orange Bell Pepper
    15 oz. can black beans
    15 oz. can Golden Sweet Corn
    15 oz. can Diced Tomatoes, No Salt Added

Tips

I cut up half an avocado and topped off my bowl with that. Noodles are good added in as well.


Directions

Add ingredients in order listed and let the pot boil as you go chop things as you need them and not all at once before you start and everything finishes cooking at right about the same time. When all the ingredients are added, turn temperature down to simmer and let simmer until everything is hot and the potatoes and carrots are the softness you prefer. It's usually not much past when you finish adding things.
