Shepards Pie

Ingredients

    6 med potatoes, peeled and cut into 1 in chunks
    1 large onion chopped
    1 pkgs sliced mushrooms
    1 large red pepper, chopped
    1 bag frozen peas defrosted
    4 large carrots skinned and chopped
    2 tbl oil
    1 lb of ground chicken breast or lean ground beef
    1 1/4 cup of unsalted chicken broth
    1/4 cup of flour
    1/2 tsp of salt
    1/2 tsp of thyme
    1 tsp of pepper
    1 tbl worshershire
    2 tbl of Ketchup
    2 tbl butter or margerine
    3/4 cup skim milk
    Chopped Scallions

Directions

Boil Potates. Cook until soft. Mash with butter and salt. add Milk and continue mashing until creamy. Mix in chopped Scallions and set aside.

Sautee carrots in 1 tbl of oil for 15 minutes. Add peppers and onions and cooked until browned and soft. Move to med bowl.

In same pan, cook mushrooms with 1 tbl oil until liquid is gone. Add peas and heat thru. Add to med bowl with other veggies.

Mix flour and chicken broth. Set to side

Cook ground meat utnil browned. Add broth/flour mixture, seasonings, worsteshire and ketchup. Let simmer until liquid thickens.

Mix meat and veggies and then place in bottom of large casserole dish.

Top with potatoes and bake at 350 for 25 minutes. Turn broiler on for 3-5 minutes to brown top
