Tuscan Vegetable Frittatas

Number of Servings: 10

Ingredients

    5 eggs, large
    2 tbsp. fat-free milk
    2 tbsp. fat-free cottage cheese
    2 oz. fat-free feta cheese crumbles
    1/3 c. bell pepper strips, thawed
    2/3 c. rustic carrots, thawed
    10 oz. broccoli pieces, thawed
    1/2 c. mushroom pieces
    1/2 c. spinach
    1/4 tsp. Tuscan Sunset (Penzeys Spices)
    1/4 tsp. Mural of Flavour (Penzeys Spices)
    1/2 c. salsa

Tips

You can substitute any spice blend for the spices.


Directions

Mix eggs, cottage cheese, and milk in a bowl.

Add feta cheese and chopped vegetables. Mix thoroughly with Tuscan Sunset and other spices, as desired.

Spoon mixture into muffin tins coated with cooking spray.

Baked at 350 degrees for about 17 minutes or until "set" and golden on top.

Add salsa and bake for a further 5 minutes.


Serving Size: Makes 10 muffin-sized frittatas.
