Skillet Potatoes Into the Oven

Introduction

First, in a skillet, I put 1 tsp soft margarine, 1 tsp olive oil + some olive oil spray, a few leaves of fresh rosemary, and some dried basil. I then chopped the potato, tomato, onion and green pepper and began to saute them just until softer (not until brown).

Once they were sufficiently sauteed where onion is translucent and potatoes were softer (but not brown), I then put them into a baking dish and tossed with the rest of the olive oil - popped them into the oven for about 20 min or until brown/crisp.

Can sprinkle a little grated parmesan over them or serve with salsa for added punch. Makes a great breakfast when you have a little more time.

Ingredients

    white potato
    red onion (can use any)
    tomato
    green pepper
    basil
    rosemary
    soft margarine
    olive oil
    olive oil spray
    Tobasco sauce

    Additional ingredients can include a sprinkle of parmesan cheese on top when served or salsa.

Directions

Saute ingredients first, until softened but not browned.

Then put into a casserole or other baking dish, toss with remaining olive oil and bake until crisp/brown, about 20 min.
