Introduction

This versatile, nutrient-rich and economical meal is perfect to take to work for lunch, for a quick dinner, or to serve as a side dish with meat or fish. It's quick, easy, and all the ingredients come from the pantry. Ingredients

    1 14oz. package whole wheat pasta
    1 package frozen Boca Crumbles
    1 20 oz. package frozen baby lima beans
    1 20 oz. package frozen spinach
    2 cans fire roasted tomatoes (with chilies if you wish)
    1 jar pimentos
    1.5 cups raisins

    Bring a large pot of water to boil. Add pasta and return to boil. Add frozen lima beans and cook until both pasta and beans are tender. Turn off heat, add frozen spinach. Stir and drain in a large colander.

    Return drained mixture to pot. Add Boca crumbles, tomatoes, pimentos and raisins. Stir well. Allow to cool and store in refrigerator.

Tips

You can change this recipe to suit your taste as often as you like, substituting different vegetables or even adding some meat instead of the soy crumbles if you so wish. Heats well in the microwave. Can be frozen in single-serve portions.

Don't be put off by the raisins; they make this dish special! They add a delightful and satisfying surprise taste and are especially good with the lima beans!
