Roasted Tomato-Tofu Enchiladas

Number of Servings: 1

Ingredients

    1 spray cooking spray
    15 oz extra firm tofu
    15 oz canned black beans
    1/4 tsp. cumin powder - not seeds
    1/4 tsp. salt & pepper
    4 large whole wheat burrito sized tortillas
    1 small onion - chopped
    29 oz canned tomatoes w/ green chillis (fire-roasted)
    2 Tb. cilantro, fresh (optional)

Tips

Top with cilantro or I shred a little colby jack over mine. YUM! (Totally stole the recipe from Weight Watchers but wanted a calorie count.)


Directions

drain tofu and dice into 1/2 cubed - add to skillet and brown with minced onions if you like - 4 minutes
Spoon tofu into bowl with beans, cumin, S & P.
Divide mixture into tortillas - place seam side down into a 9 in. sprayed baking dish.
Spray pan again and saute onion over medium heat till transluscent. Add tomatoes - cook out some liquid - 4 minutes.
Pour over tortillas. Bake for an additional 15 minutes or so.

Serving Size: makes 4 large enchiladas
