Fridge Cleanout Soup

Ingredients

    - 2 medium chopped raw zucchinis
    - 8 stalks chopped raw celery
    - 1 cup chopped onion
    - 3 tsps chopped garlic
    - 1-10 oz pkg frozen spinach
    - 1 cup matchstick carrots
    - 1-19 oz can kidney beans
    - 2 tbsp olive oil
    - 1-19 oz can diced tomatoes w/basil, garlic & oregano
    - 29 oz Low Sodium Beef Broth
    - 1 cup dry whole-wheat macaroni or small shells
    - 1˝ cups water

Directions

1. Heat oil in Dutch oven. Add the chopped onions, celery and garlic. Add a little beef broth if it starts to stick.

2. Add chopped zucchini, carrots, spinach and remainder of beef broth. Simmer until vegetables start to soften.

3. Add the canned beans (liquid included), canned tomatoes, water and pasta. Simmer for approximately 1 hour.

Serving Size: Makes 8 2-cup servings
