This recipe is quick and easy. It is both vegetarian and vegan. If you have access to "no chicken/chicken broth this is what I use all the time. You could also use Thai broth or chicken broth.     you can skip sauteing mushrooms with garlic and make this a five minute quick soup!

Tips

Over cooking makes some of veggies soggy. Best to shut burner off or simmer for short time. Ready to serve.

saute mushrooms with garlic. Meanwhile put broth in stock pot with soy sauce and sesame oil. Bring broth to a simmer. Add noodles and cook for approx 3 min and add vegetables and edamame beans.
