Polynesian Flank Steak

Ingredients

    2 pounds flank steak
    1 teaspoon grated lemon peel
    2 tablespoons olive oil
    1/4 cup lemon juice
    1/4 cup low sodium soy sauce
    1 teaspoon grated fresh gingerroot
    (or 2 teaspoons powdered)
    1 clove garlic, minced
    1 teaspoon brown sugar

Tips

LC: Serve with roasted or steamed asparagus and a big green salad.
Regular: Add baked russet potatoes.
Kosher: Make sure beef is certified kosher.
Gluten Free: Make sure soy sauce is gluten free.


Directions

Place flank steak in a large zipper-topped plastic bag. In a small bowl, combine remaining ingredients; pour over flank steak. Carefully squeeze the bag to force out any excess air. Seal the bag and turn to coat steak. Refrigerate overnight.

Preheat outdoor or indoor grill or oven broiler. Grill/broil for 5 to 8 minutes per side or until steak reaches desired level of doneness. Let steak rest for about 10 minutes before thinly slicing against the grain (diagonally).
