Millet is such a super food and easy to keep in the pantry.
1/2 C millet
2 C water
salt-free chicken boullion
1 small red onion
2 cloves garlic
1 small carrot
1 stalk celery
100 grams feta cheese
10 sprigs parsley
1 Tbs yellow mustard
1/4 cup cornmeal
1/2 tsp Mrs. Dash
Can be served hot or cold. Makes a great take-along for picnics. Just make the patties smaller for traveling.
While millet is cooking, pulse all fresh ingredients in the food processor until finely chopped.
Add cheese and process only until cheese is broken up into crumbles.
After millet has obsorbed the water, add mustard, Mrs. Dash, cornmeal and egg. Stir in veggies.
Using a 1/4 cup, drop onto hot griddle. Allow to cook several minutes until firm, similar to cooking a pancake, before turning the patty and flattening it out.
Serving Size: makes 12 burger-sized patties
