Breakfast Wrap

Introduction

A quick breakfast to go. Cheaper and healthier than a fast-food meal and a good way to get some vegetables in for breakfast. A quick breakfast to go. Cheaper and healthier than a fast-food meal and a good way to get some vegetables in for breakfast.
Number of Servings: 1

Ingredients

    1 Egg - cooked and seasoned to taste
    1 Flour Tortillas (approx 7-8" dia)
    6 Fresh spinach leaves
    1/4 Avocado, thin sliced
    2 tbsp Salsa
    (I like to add a few blades of fresh wheatgrass as well.)

Directions

Warm tortilla until soft enough to fold without cracking.

Cook egg to preference (hard boiled and sliced, fried or scrambled. This recipe does not account for any cooking oil)

While egg is cooking, arrange spinach leaves, avocado slices and salsa on the tortilla. Top with egg and wrap like a burrito, folding in the ends so it won't drip.

Wrap in a paper towel to take with you or slice in half at an angle for a stay-at-home breakfast.

Serving Size: Makes 1 breakfast wrap
