Hot Chicken Cole Slaw

Introduction

Number of Servings: 2

Ingredients

    Cole slaw, bagged, 3 cups (half a bag)
    Canned chicken, large can
    1 T Olive Oil
    3 wedges Laughing Cow Cheese, any flavor

Tips

Substitute hamburger meat for the chicken. I sprinkle a little taco seasoning over it, and the cheese flavors could be switched. Add some sour cream and/or salsa. I got this from the many suggestions on a low carb forum.


Directions

Put olive oil in a large saute pan and heat. Throw in cole slaw mix and let it soften and cook down a bit, maybe 5-10 minutes. Add the cheese, chicken and any other spices you might want (I add a little garlic salt) and let it cook awhile until the cheese is melted on low heat. Low carb and very filling!

Serving Size: Makes 2-3 servings
