Apricot Cobbler

Number of Servings: 6

Ingredients

    1 lb. 13 Ounces of apricot halves in light syrup
    3/4 cup Whole wheat flour
    1/2 cup Low fat milk
    1 Egg
    1 Teaspoon baking powder
    1 Teaspoon vanilla or vanilla extract
    1 Tablespoon Smart Balance Spread
    1/4 Teaspoon ground nutmeg

Tips

If you wanted you could add 1/4 tsp of salt and a little sugar to sweeten the batter up.


Directions

Preheat oven to 350. Grease 9 x 9 pan, drain most of the liquids from the apricots keeping some for sweetness. Put them in the pan and the nutmeg, mix- and then spread evenly. In a large bowl combine flour and baking powder. Mix. In a smaller bowl mix milk, egg, vanilla and butter. Slowly blend these ingredients in to the flour mixture. When it's smooth, evenly disibrute batter on top of apricots. You can gingerly even it out with your spatula and spread it over the apricots.
