Warm Wild Mushroom & Roasted Tomatoes

Ingredients

    1/4 cup extra-virgin olive oil & extra for drizzling
    4 large cloves garlic, peeled & thinly sliced
    2 pints grape or cherry tomatoes
    salt & pepper to taste
    1/2 poundb crimini mushrooms, stemmed & quartered
    1/2 pound Shitake mushrooms, stemmed & quartered
    1/2 pound button mushrooms, stemmed & quartered
    4 sprigs fresh thyme
    1/2 cup white wine
    flat-leaf parsley

Directions

Preheat oven to 425.

Place olive oil & garlic in large skillet. Spread out in an even layer. Brown on medium heat until golden. 4-5 minutes

Place the tomatoes on a cookie sheet & drizzle olive oil then season with salt & pepper. Place in the oven and roast for 8-10 minutes.

When brown remove garlic from skillet & reserve. Turn the heat up to high. Once you see the oil ripple add the mushrooms & spread them out. Let them cook for about 4 minutes without moving. Go ahead & give them a stir, add the thyme sprigs & season with pepper, continue to cook for another 5 minutes stirring. Add the white wine & cook until it has almost completely evaporated, then add some salt and stir.

Remove the thyme & discard. Transfer mushrooms to a serving platter, add the roasted tomatoes & parsley & Stir. Sprinkle with reserved garlic & serve.
