easy white bean tomato dip / spread
Submitted by: BINGHAM37Introduction
Vegan low-fat high-fiber spread with a little protein that comes together really quickly when you need a snack. I usually have it on baked corn tortillas or bread and top it with some chopped hot peppers & olives. Ingredients
-
cannelini bean drained, one 15-oz can
RED GOLD Petite Diced Mexican Fiesta Tomatoes, 1 can
Red Star, Nutritional Yeast, Vegetarian Support Formula, 3.5 Tbspn
Tips
Directions
Puree or mash the beans with a little liquid from the tomatoes. Stir in drained tomatoes and yeast flakes. That's it!
Use as a spread (like flavored mayo or seasoned cream cheese). You can double the beans and yeast if you don't want as many veggies in your spread. Feel free to add other chopped veggies as you like.
Serving Size: makes 6 servings of about a 1/2 cup each
