Banana, Peanut Butter, Cocoa muffins

Introduction

Number of Servings: 12

Ingredients

    1 c whole wheat flour
    1/2 c white flour
    3/4 c splenda
    1 1/4 tsp baking powder
    1/2 tsp baking soda
    1/4 cup unsweetened cocoa
    4 tbsp ground flax
    1/2 tsp ground cinnamon
    1 cup bananas mashed
    2 egg whites
    1/2 cup apple sauce
    1/4 cup creamy peanutbutter
    2 tsp spenda brown sugar blend

Tips

this could make more than 12 muffins, I just load mine nice and full. also try "frosting" them with a little more peanut butter for some added protien!


Directions

Preheat oven to 350-degrees. Lightly grease an 8 x 4-inch loaf pan... or line muffin pan with muffin liners. In a large bowl, stir together flour, sugar, baking powder, baking soda, cocoa, flax and cinnamon. Add egg whites, bananas, peanut butter and applesauce; stir just until combined. Pour batter into prepared pan or muffin tins. sprinkle splenda brown sugar over each muffin before putting into oven.

Bake in preheated oven for 30 to 40 minutes, until a toothpick inserted into center of loaf/muffins comes out clean. Turn out onto wire rack and allow to cool before slicing.
