Potato Soup

Ingredients

    6 Potatoes, large (3" to 4-1/4" dia.), diced
    1 Onion, large Vidalia, diced
    2 cups Fat free half and half
    1 cup Milk, 1%
    1 cup Milk, nonfat
    2 T Cornstarch
    1 T Salt
    1/2 teaspoon Garlic powder
    1 teaspoon Smoked Paprika
    1 teaspoon Ground Pepper
    8 oz Smoked Gouda Cheese, grated
    4 cups Water

Directions

Bring water to boil with potatoes, onion and salt for about 15-20 minutes until potatoes are cooked but not mushy (will depend on dice size). Add Half n Half, milk, seasonings and cheese. Heat until warmed throughout and cheese is melted. Scoop out about a half a cup of the liquid to mix with the cornstarch and return the mixture to the pot. Let thicken. Adjust seasoning. Serve. Makes about 14 one cup servings.
