French Chicken

Ingredients

    1 pound boneless skinless chicken breast halves
    2 Tbsp Dijon mustard
    2 Tbsp chopped parsley
    1 clove garlic, pressed
    1 cup low sodium chicken broth
    1/2 cup half-and-half

Tips

LC: Baked Hubbard squash and steamed green beans tossed with butter and slivered almonds
Regular: Add steamed red skinned potatoes
Kosher: Use soy milk instead of half-and-half
Gluten Free: Make sure mustard and chicken broth are gluten free


Directions

Coat both sides of chicken breast halves with mustard. In a small bowl, combine parsley and garlic. In a large skillet with a tight-fitting lid over medium heat, combine chicken broth and half of the parsley/garlic mixture. Add chicken and top with remaining mixture. Bring contents of skillet to a boil then reduce heat, cover and simmer for 5 minutes. Turn chicken; cover and cook for 3-5 minutes longer or until no longer pink in the thickest part. Remove chicken to a platter; cover and keep warm. Stir half-and-half into skillet liquid and raise heat to medium-high; cook and stir until reduced to about 3/4 cup. Spoon sauce over chicken and serve.
