1 Medium Onion, Diced
3 Cloves Garlic, Diced
1 TBSP Olive Oil
1- 15.25oz Can of Yellow Sweet Corn
1-14.5oz Can of Sliced or Diced Carrots
1-14.5oz Can of Diced Tomatoes (Undrained)
1-16oz Can of Red Kidney Beans (Undrained)
1-1.25oz Packet of McCormick Mild Chili Seasoning Mix
Low Fat Shredded Cheddar Cheese
Fat Free Sour Cream
1 Box of Jiffy Cornbread Mix (prepared)
**Top with Low Fat Shredded Cheddar Cheese and Fat Free Sour Cream for a low calorie meal.
**Serve hot with Corn Bread on the side.
