Oven Baked Sweet Potato Tilapia

Betty Crocker Mashed Sweet Potatoes (unprepared)
Shake N Bake Parmesan Crusted Coating
Butter-flavor cooking spray
Italian Dressing Mix (packet)
Tips
This is for one serving. I usually use an entire packet of the Shake N Bake, Potatoes, and Dressing, and save the leftover coating mix for other meals.
Directions
Preheat oven to 400 degrees.
Rinse fish. In a shallow bowl, mix together the Sweet Potato Flakes, Shake N Bake, and Italian Dressing Mix. Spray baking pan and fish (both sides) with butter-flavored cooking spray. Coat fish with coating mix, set on (in) baking pan. Spray top of fish with a bit more cooking spray (gives it a nice crunch on top). Bake at 400 for about 8 to 10 minutes or until fish flakes with fork.
