Fennel Apple Salad

Ingredients

    1 fennel bulb, ca. 300 g
    1 carrot ca. 100 g
    2 green onions
    2 small apples, total ca 200 g
    1/4 cup of vegetable broth
    2-3 tablespoons of lemon juice
    2 tsp olive oil
    pepper
    thymian
    parsley
    2 tbsp. toasted pumpkin seeds
    1 slice black bread, cubed and toasted

Tips

If you plan to chill and serve the salad later, reserve the pumpkin seeds and toasted bread cubes to add just before serving.


Directions

Chop the fennel, carrot, and green onions and place in a large bowl. Cut the apples into bite-size pieces and mix with with lemon juice to keep from browning. Add the apples to the vegetables. Toast the pumpkin seeds in a frying pan over low heat till brown. Cut the bread into cubes and toast them in the same pan. Add all remaining ingredients to the vegetable mix. Serve immediately.

Serving Size: Makes 2 main-dish servings.
