Introduction

Ingredients

    2 ounces raw almonds
    3 sf oatmeal cookies
    2 teaspoons stevia
    3-tablespoons light butter
    8 oz. fat free cream cheese (softened)
    1 cup cold almond milk
    2 Tblsp. lemon juice
    1 small box instant vanilla pudding (sugar free)
    8 oz. fat free Cool Whip
    fresh fruit of choice (nutritional info not included)

Directions

In a food processor, combine until you have fine textured crumbs - butter, almonds, cup sugar-free oatmeal (or shortbread) cookies, and stevia. Press crumb mixture into the bottom of a 9 x 13 pan.
Beat the cream cheese until smooth. Add milk and lemon juice to the cream cheese and beat until smooth. Stir in pudding mix, then fold in Cool Whip.
Spread cream cheese mixture over crumb crust. Spread fruit over top.
Refrigerate until chilled (3+ hours).
Makes approx. 12 servings
