Turkey Burgers with Chipotle Mayonnaise
Burgers
1 pound ground turkey breast, 93% lean
½ cup colby jack cheese, shredded
2 cloves garlic, minced
1/4 cup onion, finely chopped
2 Tbsp ketchup
½ Tbsp soy sauce, reduced sodium

Directions
Sauce: In a small bowl, combine the yogurt, chipotle pepper, sugar, cilantro, cumin and lime juice; cover and refrigerate until ready to serve.
Burgers: In a large bowl, add turkey, cheese, garlic, onion, ketchup and soy sauce and with clean hands, mix until well combined. Form into 4 patties, 1/2 inch thick, making a slight indentation in the center for more even cooking.
In a large nonstick skillet grill burger over medium-high heat for 2 minutes then reduce the heat to medium, and cook for 5 minutes, then turn and cook for 4 minutes. (On an outdoor grill, cook for 5 to 6 minutes per side.) Make sure burgers are cooked through but still juicy (the juices should run clear, not pink. An instant-read thermometer inserted in the center should read 165°F). Top each burger with a heaping tablespoon of chipotle sauce and serve on your choice of a healthy, whole wheat bun or with a salad.
