2 lbs Boneless, Skinless Chicken Breast
1-4oz bottle of Gourmet Garden Lemon Grass Herb Blend
1/3 Cup Shallots, Chopped
2 TBSP Vietnamese Fish Sauce
1.5 TBSP Granulated Sugar Substitute
2 TSP Olive Oil
3 TSP Garlic, Minced
2 Serrano Chiles, Seeded and Chopped
Serve over brown rice with chopped green onions as a garnish.
2. In a gallon zip lock bag, add sauce mix to chicken. Seal the bag and move pieces around to coat evenly.
3. Marinate in the refrigerator for about 2-3 hours.
4. Preheat grill. Remove chicken from bag and discard extra marinade. Coat the grill with low fat cooking spray then grill the chicken on each side until cooked through and juices run clear.
