Curried Chicken Salad
3 cups or 24 oz. cooked chicken, cubed
1 cup celery, diced
2 tsp onion, grated
1 cup seedless green grapes, cut in half
1/2 cup green olives with pimiento, sliced
1 tsp salt
1 tsp curry powder
1-8 oz. can water chestnuts, chopped
1-11 oz. can mandarin oranges, drained and rinsed, cut in half
1 Tbsp soy sauce, reduced sodium
1 cup plain greek style yogurt, nonfat
2 Tbsp fresh lemon juice
1/2 cup almonds, toasted
Mix soy sauce, yogurt and lemon juice with salt and curry powder. Toss with the rest of the ingredients and chill.
Serve on lettuce leaves or in a tomato cup.
