Introduction

Nice and tasty choice for a family breakfast or Sunday brunch. Nice and tasty choice for a family breakfast or Sunday brunch.
Number of Servings: 4

Ingredients

    $ large eggs
    1.5 c fresh spinach chopped
    .25 chopped onion
    3 garlic cloves crushed and minced
    2 oz of honey ham chopped
    dash of black pepper
    .25 tbsp dried basil
    .25 tsp dried oregano
    .25 c cold water
    3 tbsp shredded Parmesan cheese
    .5 tbsp extra virgin olive oil

Tips

adding the cold water to the eggs as you beat makes them light and fluffy.


Directions

heat oil in skillet at med heat, add the onion and garlic until aroma is released, add the ham and spinach then toss in pan as the spinach wilts beat the eggs with the cold water, pepper, basil and oregano. add eggs when spinach is wilted and cook as you would an omelet when eggs are cooked through add in the cheese and cover for a few minutes until melted and bubbly. Serve on whole wheat toast, pita, ciabatta or Italian bread if you like or with a side of fruit salad.
