Cooking Spray 1/2 cup chopped carrot (about 2) 1/2 cup chopped celery (about 2) 1/2 cup chopped onion 4 cups chopped potato (peeled) 1 stalk of broccoli, chopped salt pepper 5 cups chicken broth 2.5 cups milk, 1% (split, to be used as 2 cups, then 1/2 cup) 1 T cornstarch 1/2 cup shredded white cheddar cheese
Spray dutch oven with cooking spray. Cook onion, celery and carrot, seasoning it with salt and pepper. Add in potato, combining. Add a little of the chicken broth to help deglaze the pan. Add broccoli. Pour in chicken broth and bring to a simmer. Cover and cook until potato is tender. Add in milk. Simmer until ready to serve. Stir in cheese. Stir in slurry of 1/2 cup milk and corn starch. Stir until slightly thickened.
