Black beans and Rice

Ingredients

    black beans
    Mexicorn
    brown rice
    tomatoes
    celery
    scallions
    cilantro
    olive oil
    Franks red hot sauce
    Lime juice

Directions

Mix wet ingredients, equal amounts of Lime juice ( Rose's) Hot sauce and olive oil. I use 1/4 cup of each. Use less hot sauce if you don't like spicy foods. Add salt and pepper to the liquid. Dice tomatoes, celery and scallions. Mix these and pour liquid over and let soak. Meanwhile cook rice and rinse black beans. Mix the Mexicorn with black beans and rice. Then pour liquid ingredients over and combine well. Let flavors meld. You can serve right away but it does get better even after an hour or two.
