Huevos Rancheros

Introduction

This is one of my favourite omlettes. This is one of my favourite omlettes.
Number of Servings: 1

Ingredients

    2 large fresh eggs, beaten
    2 Tbsp sweet red peppers finely diced
    2 Tbsp green bell peppers " "
    2 Tbsp Onions finely chopped
    1/2 Cup Fresh Baby Spinach
    1 Spray of Pam
    1/4 Cup Mild Chunky Salsa


Tips

You could also add some grated cheese before folding the eggs. Don't worry if the middle is slightly runny. The eggs will continue to cook.


Directions

Saute onions and peppers in a non-stick fry pan sprayed with Pam. When onions are transparent, add the spinach and cook until spinach is wilted.
Beat 2 eggs and add to fry pan. Flip over one side when the sides start to firm up. Ease onto a plate.
Add Salsa to the fry pan to worm - pour over omlette.

Serving Size: Makes 1 serving
