Potassium-Filled Potato and Cabbage Bake

Ingredients

4 large red potatoes
2 medium yellow onions
1/2 head cabbage
1 can Great Northern Beans
1/2 cup mozzarella cheese - shredded
Parsley Flakes
Seasonings to taste, if desired.
Tips
Directions
PREP:
Peel potatoes and dice into eighths.
Peel and roughly dice onions.
Shred cabbage into thin pieces; finely chopping it works also.
Drain all juices from beans.
Preheat Oven to 400 degrees.
In a large pot, boil potatoes and onions until potatoes are soft. Drain. In a medium sauce pan, boil the cabbage until soft.
In a 13 x 9 baking dish, dump in boiled potatoes/onions, and mash the potatoes with a fork.
Spoon the cabbage and beans on top of the potatoes.
Sprinkle parsley on top of the dish, and bake for 15 minutes.
Take the pan out, sprinkle cheese over the top, and bake for 5 more minutes, or until cheese is melted and crisp.
Serving Size: Makes 8 squares in a 13 x 9 baking dish
