Ingredients

    Olive Oil, 2 tbsp
    1 Tbsp. Minced Garlic, 3 tsp (jar or 3 large cloves)
    16 oz. Mushrooms, sliced - about 4 cups
    3 Zucchini, baby - sliced
    1 large Pepper - Yellow Bell (Raw, chopped)
    1 large Pepper - Orange Bell (raw, chopped)
    2 large red (purple) onion, chopped - about 2.5 cup
    2 pounds organic ground beef (This batch was 90/10)
    1 pound ground turkey
    1 15 oz can Organic Fire Roasted Diced Tomatoes with Green Chilies
    1 15 oz Organic Fire-Roasted Diced Tomatoes,
    3 cups or so organic beef broth -- to cover
    1 cup strong fresh Black Coffee, (8 oz)
    Spices and Seasonings:
    4 Tbsp. Chili Powder
    3 Tbsp. Paprika (I used Smoked paprika)
    1.5 Tbsp. Oregano
    1.5 Tbsp. Basil
    1.5 - 2 Tbsp. Cumin
    4 Tbsp. pure baking cocoa powder, unsweetened and undutched

Directions

Saute chopped vegetables in olive oil until softened; add ground beef and scramble until pink is gone. Add spices, stir well. Add canned tomatoes, sauce, paste, and 1 cup coffee; stir well. Add beef broth to cover. Bring to boil, then reduce heat to simmer. Cook as along as desired to blend flavors. OR put in crock pot on high at least 4-5 hours; low 6-8 hours.

Serving Size: 1.5 cups. Will make about 14 servings
