Introduction

Ingredients

    Salad:
    1 1/2 cup Butter Lettuce
    1 large cucumber, peeled, sliced and quartered
    10 cherry tomatoes, sliced
    1 Tbsp fresh mint leaves, chopped
    10 Kalamata Olives, pitted and chopped
    1/4 cup fat free feta cheese, crumbled

    Dressing:
    2 Tbsp fat free greek yogurt
    1 Tbsp Olive Oil
    1 tsp Balsamic vinegar
    dash of salt

Directions

Combine vegetables, mint, olives and cheese in a salad bowl. Whisk together dressing and pour over the salad. Toss to coat.

Serving Size: Makes 1 large or 2 small salads
