8 corn taco shells (flat-bottomed shells, if available)
1 cup cheese, reduced fat, shredded
1 cup lettuce, shredded
1 cup dill pickle, sliced
1 cup fresh tomato, chopped
2 Tbsp onion, finely diced
Toppings: ketchup, mustard, and fat-free mayonnaise
Substitute: Meatless hamburger crumbles and/or skip taco shell and add more lettuce for a salad.
