IntroductionA nice twist to zucchini cakes. A nice twist to zucchini cakes.
3 tsp. olive oil
2 tbsp. chopped onion
1 zucchine, grated
1 large apple - peeled, cored and grated
1 egg, whisked
20 Ritz crackers, fat free, fine crumbs
1/4 tsp dill weed
Pepper to taste
Serve warm with a side of unsweetened applesauce.
2. Combine onion, zucchini, apple, egg, craker crumbs, dill and pepper in medium bowl until blended.
3. Heat remaining olive oil over medium heat in same skillet; Seperate the mixture into 4 balls. Drop into skillet; flatten to form 3 inch circles. Cook 5 minutes, then flip; cook 5 more minutes.
Serving Size: makes 4 three-inch cakes
