1-16 oz. can black bean, drained and rinsed 1/2 cup grated carrots 1 small shallot, minced 1/4 cup red bell pepper, minced 1 egg, lightly beaten or 1/4 cup egg substitute 4 tsp fine cornmeal 1 tsp ground cumin 1/2 tsp ground coriander 1/4 tsp Indian red chili powder or cayenne pepper Pinch Garam Masala (recipe below) Salt, pepper
Using a fork, mash black beans. Add all the ingredients to the mashed beans and mix. Form into 16 mini-burgers. Line a rimmed baking sheet with foil and spray with nonstick cooking spray or use nonstick foil. Arrange mini-burgers on baking sheet so they are not touching each other. Pre-heat the broiler, spray nonstick cooking spray on top of mini-burgers. Position baking sheet in the oven, so the mini-burgers are 4 inches from the heat source. Broil for 3 minutes, then flip over each one gently and broil another 3 minutes.
