Potato Boats

Introduction

I usually serve the Potato Boats with a side of steamed broccoli

Number of Servings: 4

Ingredients



    Potato, raw, 4 large (3" to 4-1/4" dia.)
    Ground beef, extra lean, 8 oz
    Onions, raw, 1 cup, chopped
    Butter, unsalted, 1 tbsp
    Milk, nonfat, 0.25 cup
    Pepper, black, 0.25 tbsp
    Olive Oil, 1 tbsp
    Paprika, 1 tsp

Tips

When microwaving the potatoes - I found it easier to do them in batches of two - Depending on the power of your microwave - It could take approximately 10 - 12 minutes to cook the two potatoes


Directions

Heat oven to 400 degrees F
Select 4 large, blemish free baking potatoes
Scrub skins till well cleaned
Microwave potatoes till done
When finished - cut in half lengthwise
Carefully scoop out insides, leaving shell intake and without breaking the skin - set aside
Place potatoes in bowl and add enough milk and butter to make thick mashed potatoes - season with salt and pepper
Saute meat till thoroughly cooked
Drain fat and mix meat in with the mashed potatoes
Saute onions in olive oil till golden and add to meat and potato mixture
Stuff potato skin shells with mixture
Sprinkle tops with paprika
Place all 8 halves on a cookie sheet a place into the oven - Cook till tops are lightly browned - about 10 to 12 minutes
