Family Favorite Vegetable Beef Soup

Ingredients

    1 tsp olive oil
    1 lb 93% lean ground beef
    1/2 tsp salt
    1/4 tsp pepper
    3 cans (14.5 oz each) diced tomatos with basil, garlic and oregano, with their liquid
    1 can (14 - 14.5 oz) beef broth
    1 16 oz. pkg frozen mixed vegetables
    7 cups water
    1 cup uncooked whole wheat macaroni



Directions

Brown ground beef in olive oil, in a stock pot, over medium-high heat, breaking it up with a wooden spoon. Add all additional ingredients except the macaroni. Bring mixture to a boil, stirring occasionally, then reduce heat to medium-low, cover and let simmer to flavors are blended, about 20 minutes. Additional simmering only adds to the richness of the soup.

Stir in macaroni and cover; let soup simmer until it is somewhat thickened and the pasta is al dente, about 12 - 15 minutes.
