1 cup pearl tapioca
Soak for two hours in water. Drain water and proceed.
4 cups milk (I used whole, can experiment with nonfat)
Put milk with tapioca in double boiler and cook for one hour. Stir every 15 minutes.
4 eggs, lightly beaten
3/4 cup brown sugar, unpacked, 1/2 cup less sweet ok
1/4 t. salt
Add eggs, sugar, salt to double boiler and cook until thick, stirring, 5 minutes.
Take off stove and add 1 t. vanilla
Serving Size: Makes 14 one half cup servings
