Introduction

Ingredients

    Vegetables

    2 carrots
    2 celery ribs
    2 potatoes
    1 leek
    3 cups water
    .5 teaspoon salt

    Meatballs

    2 slices wheat bread
    1 egg
    1 onion , grated
    2 Tbsp dried parsley
    .25 teaspoon salt
    .5 teaspoon pepper
    1 lb lean ground lamb
    cup all-purpose flour , for rolling meatballs
    2 tablespoons olive oil , for browning meatballs

    Lemon sauce

    zest & juice from 1 lemon
    2 eggs
    cooking liquid from vegetables

    No Yolks egg noodles

Directions

Cut carrots and celery into 1/2-inch thick slices. Peel and cut potatoes into 3/4-inch cubes.

Pulse wheat bread in food processor until it is fine crumbs. Toast in oven until medium brown. Break up with a fork, then transfer to medium bowl. Lightly beat egg; mix in with bread crumbs, onion, parsley, salt, & pepper. Add ground lamb and mix well. Form into 32 meatballs. Spread flour on plate; roll each ball in flour.

Place vegetables in wide saucepan along with leek, salt and water; bring to boil. Cover and reduce heat to medium; simmer for 10 minutes.

Meanwhile, in nonstick skillet, heat oil over medium-high heat and brown meatballs.

Add meatballs to vegetables; simmer, covered, for 20 minutes. Remove with slotted spoon when cooked through.

While meatballs are simmering whisk eggs with lemon juice & zest; whisk in the cooking liquid after removing meatballs & veggies. Pour back into saucepan; cook, stirring constantly and being careful not to boil, until thick enough to coat back of spoon, about 3 minutes.

Serve with cooked egg noodles.
