3 tbls flour
1 cup non fat milk
1 cup crab delite (or real crab if you prefer)
1/4 cup co-jack cheese or cheddar
1 sm can green chili peppers chopped
Whisk together flour, salt and milk. Microwave until thick and bubbly (1-2 min.). Stir in cheese, crab and chilis until cheese is melted.
Spoon into flour tortilla. You can add cheese to top and microwave to melt, but that isn't included in the calories.
Great topped with fresh tomato, avacado, or salsa and light sour cream.
Makes 2 enchillada. 1 per serving.
