Old El Paso Enchiladas (No Tortilla)

Introduction

I love the Old El Paso Enchilada Dinner kit, but those tortillas add SO many calories. So, I decided to make some without them! I love the Old El Paso Enchilada Dinner kit, but those tortillas add SO many calories. So, I decided to make some without them!
Number of Servings: 4

Ingredients

    1 Old El Paso Enchilada Dinner Kit
    1 lb boneless, skinless chicken breast
    1 cup diced tomatoes
    6 ozs of Velveeta Queso blanco, sliced
    1 tbsp Extra Virgin Olive Oil
    Fresh Parsley
    Salt and Pepper to taste

Tips

Other great additions: Reduced fat sour cream, olives, whatever your heart desires!


Directions

Cut chicken up very small, into bite-sized pieces. Season lightly with salt and pepper, to taste.

Add 1 tbsp olive oil to skillet. Heat oil, then add chicken. cook until no longer pink. Add seasoning mix from kit and 1/2 cup of water. Stir until sauce is thickened.

Once fully cooked, add cheese and allow it to melt (covering it with a lid should help the process along.

Spoon 1/4 mixture onto plate. Pour 1/4 cup of enchilada sauce on top. Top with tomatoes. Add a sprig of fresh parsley for garnish

Serving Size: Makes 4 servings
